Now that Missouri is finally called, we have a winner -- Our own Trail Mix original regular, Chef Sheila. A former White House staffer turned culinary artist and contributor to The Back Channel, Sheila nailed the Electoral College results long before the election: 365 votes for Barack Obama.

How did she do it?

I get to know as much about a candidate as I can, so I can get a "feel" for how a race will shape up. As you know, I was an Obama supporter from the start (as in his 2004 speech). For the last two years I have watched the campaign's strategy building with each and every week. The last two months I began seeing a trend that cycled up and down on an average of 5 points until the last few weeks. My confidence in Obama's strategy, that people wanted honesty and transparency, and my weekly reading of Fivethirtyeight.com, gave me the confidence that Obama would win somewhere in that number group . . . Now, where's my cherry pie? Of course, what I really wanted was a 15-point spread!!!!  LOL." -- Chef Sheila

    You're right that the others won't have to make the same promises, but it's an apples and oranges thing, or maybe it's more appropriate to say: a lion vs. house cats. You could de-claw the house cats, but with the lion you'd better pull some teeth.

    Congrats to Iceland. The Danes, Swedes, Fins and Norwegians just gave them a multi-billion dollar bailout.

    Here's my idea for the auto industry: Fire the top 25 people in management in each company. They probably make more than the rest of the combined workforce. T

    hen, replace them with more competent people, if a position actually needs to be filled and isn't superfluous, pay them less and make them accountable. If the company does well, maybe they get a nice bonus.

    Last, go to the unions and tell 'em sorry, but....your insurance premiums are gonna go up a bit, your co-pays are gonna go up a bit, you're gonna have to pay a bit more for perscriptions, the pension plan isn't going to be so rich, and, no pay raises but merit-based bonuses just like management.

    They don't need a bailout, they need some common sense...or just a greed intervention. That would be interesting: The top management of the "big 3" in Dr. Drew's rehab facility. Oh, the DTs they will have giving up their private jets.

    I think Whole Foods pays its top person a max of 400% of what an entry level person makes. It sounds like a lot, but do the math starting with ten bucks an hour...it seems reasonable.

  16. Looks like Obama better claim to be Muslim or he will be facing Jihad! I guess they don't care who's in charge of our country. I have changed my mind on the big 3 bailout. I talked to management about it at work last night. They didn't think it was a good idea. The big 3 need to change, giving them money wouldn't force them to change. They also brought up something I hadn't thought about. When gas was over $4 a gallon, people wanted to buy new cars that got better gas mileage. Now, gas prices have dropped. People don't need to buy more fuel efficient cars now. Also, banks aren't lending money to people right now, so nobody is buying cars for that reason as well. Another problem for the big 3. They did announce that we are going to be getting quarterly bonuses again at work. That was a shocking announcement. Also, today marks my 13th anniversary at work. Time flies.

    Your management is under the belief, a restructured auto industry means more work for them as the big three outsource more of their production. What they forget is once the unions are busted there is no reason to keep the jobs in the US. Send them to China.

  23. Well, we are picking up more business because other suppliers are going under. But, my company is also involved in other things. Batteries and heating and cooling systems. We are more divirsified, not as dependent as suppliers who only deal with car companies. The big 3 outsource a lot of work to suppliers, but if the suppliers start to struggle, somebody has to take over for them. They said our plant in Mexico was doing the same thing to other companies in Mexico.

    That sounds good for you. Looks as if your company is well positioned. There is going to be a shakeout in the industry. What ever happens the Auto industry is going to have to reduce production by 20% next from what I've read. So a lot of your competitors won't be there next year.

    BTW the reduction will also take place in the dealership end. look for a many empty lots as dealers go out of business.

    Corey - there's good and bad in every bailout - I agree that the Big 3 have to change, but I am not sure that denying the backbone, or what used to be the backbone of our manufacturing industry an infusion of cash that they claim is necessary to survive without filing bankruptcy is the right approach, particularly in light of the unfettered discretion they gave Paulson to aid the financial industry (a colossally stupid mistake). I certainly don't believe that giving them the money they ask for in the form of a loan from money already appropriated for them is the right approach. Understand that if they go the bankruptcy route, the one thing that will not happen is that their creditors, such as your employer, will not be paid dollar for dollar on any outstanding debts owed them, and likely will result in a reduction of services tot he automakers, and a consequent reduction in workforce. Might not happen, but if i was a bettin' man, that would be my bet.

    Does Detroit need to change? You bet. Do they need relief from the union contracts that fix their labor costs above the market and make their cars noncompetitive with foreign-procuced cars? That's one way to approach the problem - and for you union supporters out there, bet that will happen - it's a sure thing. But what they really need is management that anticipates consumer wants and responds with products that are appealing and with comparable quality at comparable prices.

    Thought his suggestions made a LOT of sense, especially in the long term.

    (Among them -- but plz still read the article, because he puts it so much better: Insisting on restructuring and concessions by all parties affected, including execs, unions, retirees, creditors; if a bankruptcy, a specially expedited type with terms negotiated in advance; GSA ordering a fleet of fuel-efficient replacement vehicles to be designed and delivered in a few years -- with a major deposit/cash infusion to support R&D; government possibly buying up to 50% of companies' stock -- cash infusion in return for chance to sell stock of healthier companies for a profit to taxpayers in the future ...)

    The Marine band first played the song to entertain John Quincy Adams, but was first used to introduce James K. Polk. This was suggested by Julia Tyler wife of Polk's predecessor.

    I woild love to be the Personal Chef of the five who exist there.

    Rick Bayless is a great guy! But the White House needs a very versitile Executive Chef who knows Garde Manger as well as a host of world tastes and presentation.

    Bayless is fantasitc and my favorite chef and mentor in Mexican cuisine.

    But I bet one of our certified Master Chefs get the nod eventually.

    I would also (said this before) like to see an African American in the White House. there hasn't been one yet.

    A foreign infusion of cash gives GM the freedom to make the changes they need. They are going to have to do some major restructuring in the next year. Plants are going to be closed and congress critters are not going to be happy about it.
    One of their major problems of asking congress for help is they can not be honest about their plans for political reasons.

    As I read the link dog posted what keep popping into my mind, you can sure tell this is a business reporter and not a political one.

    I've only met two wonderful black chef's and one was an expert in Louisiana Soul food and the other in French cuisine, but not on the level your talking about.

    The soul food guy a hole in the wall kind of building in a huge parking lot in Westwood. It was all take out orders over a counter (You carried your own food as far as the tables set up in the parking lot). Too die for food and and incredible ambience as chaufferued limos parked next to Fords that looked like escapees from destruction derby.

    All the Hillary Clinton bashing in the media now is frustrating me. The media attacks the "drama" that surrounds the Clintons, but mostly it is the media that creates it. And I am also a bit frustrated with Hillary, DECIDE ALREADY! It's not helping her image to be "wavering", and I don't think it helps the new administration. She should just say "I accept" or "I respectfully decline" and be done with it.

    I was totally for Hillary being SOS, but I am so turned off by the media reporting that I've come to believe she'd do better in the Senate. Working with Ted Kennedy on Universal Health Care would be a wonderful task, and she knows the issue thoroughly. Her past experience would help also, as she will know what pitfalls to avoid...

    Just my thoughts.

    The Clinton's wouldn't have subjected to the vetting unless they thought it was a serious offer that she was willing to accept.

    This really is a complete media, commentator, and staff driven rumor mill, and it is disgusting ... another chance for the Clinton haters to load up and fire. I swear there are members of litter rotten that won't be happy until the whole family is six feet under.

    It even bothered Chris Matthews last night and that is going some.

    I know from my readings that the Obama's really watch what they eat. Obama does a lot of Meatless meals, although he's not meatless.

    I'd say Daniel Young is the best in this country. Most African American Chefs who are not doing just soul food are just too young.

    Look for a certified Master Chef like Walter Shieb's (greenbrier fame and Clinton White House Chef) ilke.

    But Private Chef, may I have a snack for midnight type, will be a low fat, very healthy signature cook, I bet.

I was only interested in the part that talked about how much Michelle and Barak had depended on her mother, and how important she is to the girls. I'm not surprised, but it's nice to know.

    As for the pirates talk...if I were a baseball fan, I would demand that the head pirate be immediate be brought in to run the Pittsburgh Pirates. This way they can sniff a winning record. Otherwise, I would take a couple of cargo ships and load them with radar guided gatling guns that can spray 3K rounds per minute...send them out as bait and just light up every pirate boat that got close.

    Now Bear, POunding chicken breast flat for Kiev.

    1. Two large pieces of plastic wrap. A good mallet with good weight. one side large and one side small grids.

    Place the butterflied breast in inbetween the plastic. Don't seal it.

    Starting with the large grid of the mallet and in the middle, just let the mallet drop, don't pound and work your way to the outside. If you need more weight just do it in firmer slaps of the mallet or you could tear the chicken.

    open the plastic at intervals and then close again so you can let it out for the size of the breast.

    Use the smaller grid when you see ridges forming in the meat. don't want to tear.

    Ok. That method is called "Paillard".

    Having had one of the most wonderful grandmas in the world (whom I miss every single day) I think it's awesome that the girls' grandma will live with them. My Gram lived with us pretty much all the time and she provided a lot of stability that was needed in our home. I was always her "shadow", preferring to spend all my time with her instead of my own parents... :-) Thing is, no matter how much I screwed up, she just kept on loving me... I hope the girls have that same sort of love from their Grandmother, and if she is anything like mine is, they will be well protected!

  122. Here's a Pumpkin Cornbread recipe for Shelia and others to try out for Thanksgiving.

    1 cup (8 ounces) pumpkin -- Libby's offers both pure pumpkin
    and pumpkin pie mix in cans, and one-half can of either
    will do just fine.
    1 cup milk
    1 cup cornmeal
    1 cup flour
    1 egg
    4 tsp. baking powder
    1 tsp. salt
    3 tbs. melted butter
    black or golden raisins (optional)
    cinnamon to taste (optional)

    Melt butter.

    Mix ingredients in order given.

    Grease loaf pan or square pan as you prefer.

    Bake 40 minutes at 400 degrees.
